Listeria inhibition
PURAC Fresh, a liquid lactic acid
based product is used in deli salads to control the outgrowth of Listeria monocytogenes. Previous studies
have shown that its optimised formulation suppresses the proliferation of this
pathogen at a pH even up to 5.5. The recent development of the PURAC Fresh Listeria Control Model supports this study. This interactive

Shelf life
Microorganisms, such as yeasts and
lactic acid bacteria, can cause spoilage in deli salads. PURAC Fresh controls
the growth of a broad range of microorganisms, resulting in an improved shelf
life.
pH regulation
PURAC Fresh is available at two pH
levels, allowing for flexible pH adjustment of deli salads. The buffering
capacity of both products ensures a stable pH of the salad throughout
production, which gives ease of use and comfort.
Flavor improvement
The use of food acids in deli salads
often limits the creativity of product developers, since the products tend to
become too sour. PURAC Fresh is optimised for giving a mild acid flavour to
food products, while maintaining food safety and the desired shelf life.
Furthermore, lactic acid is known for enhancing certain flavors such as bacon,
tomato, green herbs and cheese.
