PURAC, producer of lactic acid, lactates and gluconates, has put
together an education kit for students and professors of Food Sciences and Food
Technology, among other related studies at the university level. Two education
kits have been created, one relating to food acids and the other on
preservation of meat and poultry.
Food Acids
The material presented will acquaint you with the qualities and functionalities
of acids as food ingredients. Lactic acid, acetic acid, citric acid, phosphoric
