The PURASAL Opti
Form Listeria models can help you make a broad
range of cured products, from hot dogs to hams, safer. The PURASAL Opti
Form Listeria Models are a unique tool for
calculating the level of lactate and diacetate to control and inhibit the
growth of Listeria monocytogenes in cured meat and poultry products. PURAC
has now launched its 2007 model:
The Opti
Form Listeria
Control Model 2007 is the latest release boundary model predicting
Listeria outgrowth based on both uncured and cured cooked meat products. The
model is fully in line with the FSIS Interim Final Rule for the control of Listeria
monocytogenes in RTE meat and poultry products that came into effect
October 6, 2003 in the United States. The Opti
Form Listeria Control Model 2007 is a unique tool to
help calculate the level of lactate and diacetate needed to control Listeria in
cured an uncured cooked meat- and poultry products for their required shelf
life.

Form Listeria Control 2007 model is available on
CD-ROM and can be downloaded
