Research has shown that formulations of lactic acid with citric acid or malic acid enhance and intensify flavors. Lactic acid by itself enhances several red fruit flavors, as well as cream flavors. Especially when multiple flavors are combined in one candy, the formulating of acidulants creates new opportunities.
