Orange juice fortified with calcium citrate malate (CCM) has been
extensively studied and is therefore well known and well regarded as being highly
absorbable calcium. PURAC has launched a calcium lactate citrate comparable in
absorbability to CCM calcium with the added benefits of also being taste and
flavor enhancing and easy to use: PURACAL QSynergy.
A clinical study in orange juice was conducted in 2007 at the Osteoporosis
Research Centre of Creighton Unversity, Omaha,
Nebraska, with a group of pre-
and post-menopausal women. Two calcium
fortification systems added to unfortified orange juice were compared to
commercial orange juice with CCM calcium.
The two comparison calcium systems were 1) PURACAL QSynergy
calcium lactate citrate and 2) a m
ixture of tricalcium phosphate and PURACAL
PP calcium lactate (each of the two salts providing 50% of the total
calcium). The study established that
PURACAL QSynergy when incorporated into orange juice exhibits
absorbability indistinguishable from that of CCM. Similarly, the alternative
fortification system (50% calcium from PURACAL PP calcium lactate with 50%
calcium from tricalcium phosphate), while exhibiting a slightly lower mean
absorbability value, nevertheless results in very nearly as much absorption as
the other two calcium fortificants. For production ease, PURACAL QSynergy
is significantly more soluble than calcium citrate and calcium phosphate and is
the sole calcium source necessary. PURACAL QSynergy will
stay homogeneously suspended throughout production and will not scale on
heat-exchangers. Consumers will appreciate that PURACAL QSynergy
enhances the fresh fruity flavor of juices without chalkiness or flavor-dulling
commonly associated with calcium fortification.
