In candies where you want to combine cream with fruit, lactic acid finishes the taste sensation, since it enhances the cream note. For such formulations, PURAC BF is the acid of choice. PURAC BF is a buffered lactic acid, designed for more severe temperature conditions of a depositing line, and is frequently used in cream and fruit formulas. PURAC is a mild acid, as compared to other acidulants used in confectionery.
