·         Pickled vegetables
PURAC lactic acid is effective in preventing the spoilage of olives, gherkins, pearl onions and other vegetables preserved in brine. The stability of the brine is ensured and the taste is improved.

·         Confectionery
Formulating hard-boiled candy, fruit gums and other confectionery products with PURAC liquid lactic acid results in a mild acid taste and low inversion levels. PURAC Powder is used for acid sanding.

·         Dairy & Tofu
Its natural presence in dairy products, combined with the dairy flavor and good antimicrobial action of PURAC natural lactic acid, makes it the preferred acidification agent for many dairy products. PURACAL, PURAMEX and GLUCONAL are used to fortify milk and fermented dairy drinks.

PURAC and PURAC Powder are used for direct acidification in the production of sourdough. Lactic acid is a natural sourdough acid which gives the bread its characteristic flavor.
