PURAC’s calcium,
potassium and magnesium salts have a very neutral flavor profile, which makes
them extremely suitable for liquid formulations. PURAC’s iron and zinc salts
have a relatively neutral taste, with less metallic flavor impact on the
formulation than most alternative iron and zinc salts. The impact of mineral
lactates and gluconates on the pH of the end application is relatively small
when compared to some alternative sources such as certain carbonates, citrates,
sulphates, oxides and hydroxides.
