PURAC’s calcium, potassium and magnesium salts have a very
neutral flavor profile, which makes them extremely suitable for powder
formulations. PURAC’s iron and zinc salts have a relatively neutral taste, with
less metallic flavor impact on the formulation than most alternative iron and
zinc salts. The impact of mineral lactates and gluconates on pH when the powder
formulation is added to water or food products is relatively small compared to
some alternative sources such as certain carbonates, citrates, sulphates,
oxides and hydroxides.
