Shelf life extension


Shelf life of refrigerated foods dictates distribution chain length. An increased shelf life provides extra flexibility for retailers and convenience for consumers. The shelf life of refrigerated food products is relative short. Very often, the "best before" date is determined by deterioration of the food product due to spoilage microorganisms.
 
The group of microorganisms that can cause spoilage depends on multiple factors such as initial flora, physical/chemical properties of the food product, processing steps (e.g. cooking step) and packaging.
