Listeria monocytogenes
Of all pathogens, Listeria monocytogenes is the most
commonly associated with food safety in refrigerated food products
due to the level of attention it receives from the press. In
contrary to most pathogens, Listeria monocytogenes can
grow at refrigerated temperatures, making this type of food product
vulnerable when contaminated. Furthermore, this gram positive
bacterium is able to grow at high salt concentrations and is
widespread in nature. Listeria is also able to cause a
food borne disease (listeriosis) in food products that are visually
in perfect condition. Due to the high mortality of Listeriosis,
every association with an outbreak is followed with maximum
interest from government and media.
