Many food products are refrigerated to slow down the growth of microorganisms. However, many micoorganisms can grow under refrigerated temperatures and cause microbial spoilage or even worse: foodborne illnesses. A proven method to tackle this problem is the "multiple hurdle technique". This is a combination of antimicrobial methods (multiple hurdles) such as temperature, pH, wateractivity and the use of organic acids.
 
These combinations, or 'multiple hurdles', can effectively control the growth of microorganisms whereas these methods - when used alone - would not be sufficient . We have many years of experience in this specific field and we'd be happy to help you with custom made advice.
