Fresh meat products have their own set of challenges for processors. Unlike cooked products, that incorporate a step to kill microorganisms, fresh products have a relatively high microbial load and short shelf life. Furthermore, enzymes are not deactivated and meat color reactions continue, resulting in rapid loss of 'red' color, a key appeal for consumers.
However, a product need not only be stable, but also as safe as possible. Salmonella and E. coli are major pathogens of concern in fresh meat products.
