For all candies, a prolonged supply chain can result in unwanted stickiness. This is a direct result of sugar inversion, where sucrose splits into glucose and fructose.
 
Purac's products for confectionary all include a buffer system which will reduce sugar inversion levels whilst maintaining original sourness.
