Consumers are clearly leaning towards healthier, more nutritious food products and are easily swayed by health claims on labels. Consumers are already aware that dairy products are by nature an excellent source of calcium. However, producers recognize that additional nutritional value can attract more customers by further increasing the healthy image of end-products.
 
A trend is seen that products are calcium fortified with levels up to 50% of the RDI (1000mg, serving 240 ml). With these high amounts of minerals some big challenges needs to be overcome. The impact on taste of the products should be as minimal as possible. Also the solubility of most of the calcium salts is too poor especially when a beverage is made out of syrup or a concentrate. Purac supplies PURACAL calcium sources, which are ultimately suitable to develop high calcium fortified foods such as fruit juice/concentrates and dairy products. Beside the high solubility the salts are proven to be as bioavailable as calcium from cow milk.
